Week 1 Menu & BBQ Beef "Nachos" {Recipe}

One of the biggest challenges of clean eating is the amount of prep required in order to ensure you're not spending hours each day preparing meals. Even when I'm not following the Whole30 guidelines to a T, I still use a very similar prep method because it really makes my life easier.

For breakfast, I'll make a lot of one dish on Sunday and eat it all week.  I need something I can throw in my bag, take to work, and eat it at my desk.  In my pre-paleo days, this was something like a couple muffins or a pack of instant oatmeal.  Now it's much more focused on eggs and protein.

I take the same approach for lunch as I do breakfast: I make enough of one dish to last me all week. This might be a big thing of chili, enough chicken or steak for a week of salads, or maybe a bunch of burgers.

For dinners, each week I pick out 3 recipes to make.  Usually the recipes are big enough for me to get 2-3 meals out of each, so I'll eat leftovers on the other nights.

I also make sure I have plenty of challenge-approved snacks on hand in case I get hungry. My favorites are almonds, cashews, raisins, dates, jerky, olives, and pickles.

So what's going on in my kitchen this week?

Breakfast: Scrambled Eggs, Sausage, & Roasted Sweet Potato
Lunch:      Italian Sausage w/ Roasted Brussels Sprouts {Target's Simply Balanced brand as a couple that are challenge approved}
Dinners: Spaghetti Squash "Pizza" Pie
                Asian Chicken Thigh w/ Green Beans
                BBQ Beef "Nachos" {recipe below}
Snacks:  Trail mix {nuts and dried fruit}
                "Antipasto" snack: red pepper strips, olives, pickles, and prosciutto

Weekly Prep: My shopping day is normally Saturday or Sunday and I prep on Sunday afternoons. This week, here's my to-do list:

  • dice and roast sweet potatoes
  • season and brown ground pork for breakfast sausage
  • roast brussels sprouts

Normally the to-do list a little larger, but since I'll make the eggs every morning and the italian sausage for lunch is fully cooked and just needs to be reheated, it significantly cuts down on prep work.

Every morning, I can grab a plastic container and fill it with that day's portion of sausage and sweet potato. Then I'll throw 2 eggs {raw, in-shell} in a separate container {they'll be scrambled and cooked in the microwave when I get to work. Not world-class cuisine, but it's tasty and gets the job done.}

I'm lucky to be able to come home everyday for lunch, so that's one less thing I have to pack for work. This week, I'll just quickly warm up the sausage on the George Foreman and saute the already roasted sprouts to warm them up (microwave would work just fine too).

When I get home after I put in some time at the gym, I'll eat a banana and work on dinner. This one I'm posting takes a little bit of work, but the crockpot does most of it. {Note: some might consider this meal as "SWYPO" because I'm calling it nachos. If it was attempting to hit the same flavor notes as traditional nachos, I'd agree. But really I just eat it this way because I like eating things with my hands (sandwiches, tacos, etc...)}

BBQ Beef Nachos

Inspired by Well Fed 2's BBQ Beef Waffle Sandwich

What You'll Need:

  • Your favorite BBQ beef & sauce recipe {there are several out there- I like the one from Well Fed 2 but since Melissa has chosen not to post it online, I won't do that here. If you're at a loss, try this one but with beef instead (or you could use pork too)}
  • 2 large sweet potatoes
  • 1 bag Classic Cole Slaw mix {or chop your own mix of cabbage, red onion, and carrots}
  • 1 large Egg {room temperature}
  • 1 cup Light Olive Oil
  • Juice of 1/2 Lemon
  • Dill Pickle Slices
What To Do:
  1. Trim & season your beef roast and cook in crockpot per your recipe's directions. Shred meat with about 1 hour left, add sauce to crockpot, and cook for 1 more hour on low.
  2. During the last hour in the crockpot, preheat your oven to 400F. Prep a baking sheet with foil.  Slice sweet potatoes into thin (1/8-1/4 inch) rounds, like thick chips. Drizzle with a little oil (coconut, olive, etc) and season with salt.  Bake for 20-30 minutes, flipping halfway through. The rounds will be kind of crisp on the outside, but fluffy like a baked potato on the inside. Don't bake until fully crisp like a chip.
  3. With your rounds in the oven, you can make the mayo for the cole slaw. Crack the egg into a wide mouth mason jar. Add lemon juice, a pinch of salt, and olive oil. With an immersion blender at the bottom of the jar, blitz the egg/oil combo. You'll see it change in about 30 seconds. Then slowly bring the blender up to the top of the jar, but keep it in the mixture, to blend all the oil. Presto-chango: you have mayo.  {Alternatively, if you don't have an immersion blender, this can be done in a food processors, but you have to VERY SLOWLY drizzle in the olive oil}
  4. Mix your mayo {some or all depending on your preference} with the cabbage mix and a little bit of salt and there ya have it- Whole30 cole slaw.
  5. To serve, I like make a "mountain" of meat, cole slaw and pickle chips which I then pick up and eat 'nacho-style' with the sweet potato rounds.

Jalapeno Popper Sliders

I try to eat healthy.  Emphasis on try. My theory, if I'm a good girl and eat my fruits and veggies and not a ton of crap for breakfast, lunch and dinner, then I can indulge a little bit. Hence the two bags of Dove chocolate currently in my pantry.
However, I'm also the type of girl that would eat the TGI Friday's sampler platter for a meal.  Potato skins AND mozzarella sticks AND jalapeno poppers AND hamburger sliders?  Works for me!
So when I saw this burger, I knew it was love at first sight.  You mean I not only get a burger (I've gone on about my love of sandwiches here, and burgers are like the sandwich's awesome uncle) but that burger gets loaded up like a jalapeno popper.  Sign me up.
And these burgers- holy crap.  Honestly, one of the best I've EVER had. EVER.  Like really, E.V.E.R.

The patties themselves are nothing special.  It's all in the toppings.  The most amazing cream cheese mixture you've ever experienced.  I'm for serious.  I almost ran out and bought bagels just to have something else to smother this amazing spread on.  Plus sharp cheddar and jalapenos get to join the party.  How is that not a winner??
And you don't need a snazzy grill or cooperating weather- you can make them inside.  Oh George, how I love you. (Me and my George Foreman grill are on a first name basis)
And you can't have burgers without fries.  Those lovely, crispy, golden brown delights are coming up on Friday :)

Beef & Sweet Potato Stew

After weeks of cookies and cupcakes and truffles and frosting and (a failed attempt at) brownies, sometimes you just want good ol’ red meat.
And sweet potatoes.
And carrots and onions and mushrooms and garlic.
And beer. DEFINITELY beer.
Then you pour it all over rice (ok- I may have skipped a few steps….but you get the idea).
And then, with your hair a hot mess and a slight dusting of flour on your slippers (yes I wear slippers around my apartment. Yes, I’m actually 80 years old and go by Myrtle), you trek over to your couch and put on the greatest show ever.  Fear Factor.
Not kidding- have you seen it since it’s come back?  It’s ridic.  I can’t look away.  Part of me wants to be Joe Rogan when I grow up just so I can make people do the insane things on the show.
Ahh…guilty pleasures….

Steak and Cheese Sandwiches

Friends is one of my all-time favorite TV shows.  Even though I have seen every single episode and have probably half of them memorized, I still watch reruns of it every day after work. (Seriously, every day- welcome to my exciting life. Hehe)
One of my favorites is when Monica and Rachel bet that they know Chandler and Joey better than Chandler and Joey know them and Ross makes it into a game show.   It turns into a crazy, rapid-paced back and forth, the stakes become insanely high.  (Spoiler alert- the girls end up losing their apartment to the guys).  In one of the many rounds, Monica gets asked what Joey’s favorite food is and without blinking, yells out Sandwiches!
I can SO relate.  I love me a good sandwich.  Every day for lunch? Turkey sandwich.  When I go out to dinner? More often than not, it’s a burger or some sort of chicken sandwich or club.  Late night snack? PB&J.  I mean, what’s there not to love about sandwiches?
And this sandwich? This sandwich is awesome.
Steak.
Onions.
Mushrooms.
Cheese.
All on crusty bread.  It’s a sandwich-lovers dream

My "Award Winning" Chili

A couple weeks ago, we had a chili cookoff at work. After my last attempt at chili, I got quite a bit of questioning from the "I don't like the taste of cooked tomatoes" Marshall. Now, I will say, the chicken chili was a bit of a looser chili, so there was a stronger tomato taste but dang, was he ever a non-believer :-P

Anywho, the chili I enter for the cookoff was a traditional ground beef chili. No beans, just beef, tomato sauce, beef broth and lots of spice :) And it took third place! Woohoo. And I didn't even use a recipe. Which yay for me except now I have to figure out how to recreate it. Hence a) why I'm making it again and b) why I chose to blog about it- document it for future re-creation.

How Long Is This Gonna Take:I made mine over the course of about 2 hours, letting it cook inbetween some spice additions. I'm not sure if this is necessary, but if you have the time (say a lazy Saturday afternoon), then it can't hurt.

What You'll Need:
2-2.5 lbs ground beef (lucky for me, 93/7 was on sale...you'll want to try to get the leanest possible)
1 tbsp granulated onion
1- 15oz can tomato sauce
1- 14oz can beef broth
5 tbsp chili powder, divided
1 tsp garlic powder
1/2 tsp salt
1 tbsp cumin, divided
1 tsp cayenne pepper, divided
1/2 tsp black pepper
1 chicken bouillon cube
1 tsp paprika
1 tsp chipotle powder
2 cans of beans, drained, whatever you prefer (I used one can kidney, one can pinto)
1 can diced tomatoes, drained

What To Do:1. Brown ground beef along with granulated onion in a non-stick skillet. Drain.
2. In a large stock pot, combine beef with tomato sauce and beef broth. Simmer, covered, for 30 minutes.

3. Add in 3 tbsp chili powder, garlic powder, salt, 1/2 tbsp cumin, 1/2 tsp cayenne, black pepper, and chicken bouillon cube. Simmer, covered, for 1 hour.

4. Add in 2 tbsp chili powder, paprika, 1/2 tbsp cumin, 1/2 tsp cayenne, chipotle powder, beans, and tomatoes. Add water if you want more liquid

5. Simmer, covered, for about another 30 minutes or until ready to serve.

6. Top with your favorite sides- I go with oyster crackers and a little shredded cheddar.

(sorry for lack of pictures...chili isn't too exciting to make.)
