One of my earliest memories is staying up "late" on Monday nights as a kid so I could hear the Hank Williams Jr. "Are You Ready For Some Football" intro to MNF. {Because to a 3 year old, that was one rockin' song}<br />

Now Hank may have said some things that didn't go over too well and was replaced by the leggy likes of Faith Hill and Carrie Underwood, but my love of the game remains. I love it even more when it gives me the excuse to eat insane amounts of food. Because pizza. And wings. And velveta-chili dip. And beer.<br />
<br />
Sadly, all of the aforementioned awesomeness is not allowed on Whole30. Now while some may choose 'The Big Game' as an excuse to cheat, I'm way too competitive to give up challenge points for one day of heartburn {If there's something to win, I want to win it}.<br />
<br />
So I need to get a little creative with my Superbowl feast this year. Here's what's on my menu:<br />

And to be honest, while some might be struggling, eating Whole30 food is kinda becoming second nature to me. Yes- it sometimes requires a call to a local restaurant to make sure their pulled pork rub doesn't include sugar (sorry Mission BBQ- I was that weirdo on the phone), but overall I feel like I've been doing pretty well. I haven't been going crazy with Twinkie cravings nor have I woken up from sleep walking with my face in a bag of chocolate chips. I consider that a win.<br />
<br />
But for those that aren't having the easiest time, no worries. It hasn't been all rainbows and butterflies. I am a little concerned that while I <i>feel </i>a little better {still don't feel invincible, but better than I was pre-challenge), it's not really helping me <i>look </i>any better. I did a no-no and stepped on the scale this morning and I haven't lost a pound. Now, I realize that the scale only tells part of the story. I very easily could be gaining muscle {and probably am} while losing fat. But I was really hoping that this challenge would help my pants fit a bit better after some holiday feating. I just have to keep remembering that there's still 45 more days- I have a long ways to go. Here's hoping my body starts catching up :)<br />

I'm in the middle of brewing my first batch of kombucha, so I'm hoping to get a how-to post about that up soon. And last week I clarified by own butter to make ghee so I'll make sure to write up how that went {in a word: awesomely}. However, not all kitchen adventures turn out well. Case in point: I attempts at homemade beef jerky tunred into a crumbly, charred mess. I think I'm better off just buying some.....Oh well, can't win 'em all.<br/>

There's a <a href="http://rxbar.com/" target="_blank">great company</a> out of Chicago that makes 100% Paleo, 100% Whole30-approved high protein energy bars. They only use fruit, nuts, clean egg white protein powder, and spices. They're awesome!<br />

Unfortunately {like the rest of the paleo world} clean, whole food equals expensive food. 10 RxBars will run you about $30. I'm sorry, but $3 a bar for a post-WOD snack is a bit much for me. <i>However, </i>clean, whole food also equals ingredients that I have on hand and can easily replicate.<br />

So I got to work. RxBars are basically a Larabar with protein powder, and since I've made a homemade version of <a href="http://seesarahbake.blogspot.com/2013/05/brownie-batter-larabars.html" target="_blank">brownie batter Larabars</a>, I figured an RxBar wouldn't be too hard to master.<br />

And luckily I was right. The original has 7 ingredients: dates, egg white protein powder, almonds, figs, apple powder, cinnamon, and apple oil. Mine only has 5- I left out the figs and apple oil {because I have no clue what apple oil is...} and for apple powder, I processed freeze-dried apples into a powder {no idea if that's actually what apple powder is, but it worked :)} I was even able to match the nutritional context almost exactly.<br />

What To Do:</div>

<li>In a small food processor {I used my<a href="http://www.target.com/p/ninja-express-chop-purple/-/A-13742355#prodSlot=medium_1_5" target="_blank"> mini Ninja</a> when making only one, but the 5 bar batch required a regular sized one}, blitz the almonds, protein powder, apples, and cinnamon until finely ground.</li>
<li>Add dates and process until uniformly broken down.</li>
<li>Add very little water {seriously, a few drops} and process. Continue to do this until the mixture starts to stick together. I added probably less that 1 tsp over the course of 3 iterations for 1 bar and about 1.5 Tbsp for the 5 bar batch. </li>
<li>Form into a bar or roll into bite-sized balls. I pressed into a small ramekin I had to make disks. Refrigerate in an air-tight container.</li>

This is just really simple, Mexican flavored inspired scrambled eggs, but that doesn't sound very exciting. Hence, fiesta! It's a Mexican breakfast party {or something like that ;-)}<div> <br>
<span style="font-size: x-large;"><b>Fiesta Egg Scramble</b></span><br>
<br>
<b>What You'll Need:</b><br>
Makes 1 omelette<br>
<br>
<br>
<ul>
<li>1 tsp Ghee</li>
<li>2 Eggs</li>
<li>1-2oz Chorizo**, already browned and cooked through from prep day</li>
<li>1/4 cup Onions and Peppers, already diced and sauteed to tender-crisp from your prep day</li>
<li>Salt & Pepper</li>
<li>1/4 cup Salsa</li>
</ul>

<b>What To Do:</b><br>

<ol>
<li>Crack eggs in a bowl and beat well with a fork. Season with salt and pepper. Mix in your chorizo & veggies with the beaten eggs.</li>
<li>Heat up skillet on med-low heat. When it gets hot, add ghee (or fat of choice). When ghee has melted, add your eggs/meat/veggies and move the pan around to spread them out evenly.</li>
<li>When the eggs start to firm up, but there's still a little raw egg on top, break up eggs to 'scramble'</li>
<li>When eggs are fully cooked, slide off onto plate and top with salsa.</li>
</ol>

** To make your own chorizo, add 1 Tbsp each of: chipotle chili powder, paprika, garlic powder, & onion powder and 1/2 Tbsp of salt to 1 lb of ground pork.**

And I'd say it was a pretty good success. I felt really good in the gym later in the week. On Thursday, we had a really quick but cardio-intense WOD and I was able to keep a really good pace and on Friday, I PR'd my front squat by 25 lbs. I'd say a success so far. :-) Next week, I really want to focus on getting at least 8 hours of sleep if not more. I can definitely feel a difference when I get just a little bit more rest.</span><br />

For my weekly prep work, I need to season and brown chorizo {for the egg scramble}, chop and saute onions and bell peppers {also for breakfast}, make jerky {fingers crossed it goes well!}, bake chicken {for lunch}, and assemble and bake stuffed peppers.<br />

This week, I also have a few kitchen experiments going on. I want to attempt to make my own ghee using <a href="http://nomnompaleo.com/post/15235810877/d-i-y-ghee" target="_blank">this recipe for NomNomPaleo</a> and I purchased all the supplies to brew my own kombucha {or moldy juice as James calls it}. I think I might have reached official 'hippie' status.....<br />

But no matter....now on to my favorite side dish ever. I would literally eat sweet potatoes every day for dinner {and this week I will} and this is my absolute favorite way to prepare them.<br />

<li>Preheat oven to 475F. Have your top rack in the middle of the oven with your bottom rack directly below it and lay a large piece of foil down on the bottom rack.</li>
<li style="text-align: justify;">You can peel your sweet potatoes if you'd like {sometime I do, sometime I don't- it just depends}. Then cut down into wedges. How I do this is I cut the sweet potato in half lengthwise, then aain in half again lengthwise {so you've quartered the potato}. I then slice each quarter into ~3 wedges. So you get about 12-15 wedges per potato, give or take. If it's a really long sweet potato, half each wedge. </li>
<li>Lightly toss with oil and salt. Place wedges directly on the top oven rack with the large piece of aluminum foil on the rack below {to catch anything that might fall/drip}.</li>
<li>Bake for 12-15 minutes, until the outsides have started to brown and the insides are tender. Serve immediately. Especially good with sriratcha ketchup when not on Whole30 :)</li>

Snacks consist of almond/cashew/date trail mix and my antipasto snack, an idea a stole from <a href="http://www.theclothesmakethegirl.com/" target="_blank">Melissa of The Clothes Make The Girl</a> and the Well Fed books. But since I've been referencing it enough and I plan to make it a regular {read: until I get sick of it, which I doubt will happen because I really love it}, I figure I'd do a post on it. {See recipe (and I use that term loosely) down below}<br />

Even though I got my full 7+ hours of sleep that the challenge encourages, I still was dragging when my alarm went off at 6am. But I managed to make myself look pseduo-presentable, pack up my breakfast {eggs with turkey sausage and sweet potatoes} and snacks {trail mix of almonds, cashews and dates & Well Fed's "antipasto" snack of red pepper strips, black olives, a few slices of cold roasted chicken {recipe below}, and a pickle}, and make it out the door in time.<br />

I had my morning cup o' joe {black} when I got into work. I'm thinking about making <a href="http://followingmynose.com/2010/10/a-primal-non-dairy-coffee-creamer/" target="_blank">this recipe</a> for a paleo creamer and keeping it in the office fridge. I don't completely hate drinking my coffee black, but smoothing it out with a little creamer does sound lovely. I didn't get hungry for breakfast until around 9:30 {this is normal for me- I've never been able to eat first thing in the morning}, so I made my way to the kitchen to nuke my eggs.<br />

This is literally one of my favorite paleo meals and I'm sure it will make its appearance a couple more times before the challenge is over. I followed it with a bit of my trail mix that had gone untouched throughout the morning {mostly because I ate breakfast so late} and headed back to the office.<br />
<br />
Snacked on my "antipasto" around 3pm. Personally, I like to eat about 2 hours before I work out. I don't really see it as a "pre-workout" meal in the traditional sense of needing to fuel myself before hitting the gym with the correct ratio of protein/fat/carbs but rather I find my workout goes just a little better when I'm not on a completely empty stomach.<br />
<br />
After a WOD full of hang snatches, lateral jumps, and burpees I went home, downed a banana {mmmmm....after workout carbs} and a couple more pieces of cold chicken breast, and got to work on dinner. I made <a href="http://paleomg.com/almost-5-ingredient-pizza-spaghetti-pie/" target="_blank">PaleOMG's Spaghetti Squash Pizza Pie</a>. It took a bit longer than I would've liked {mostly because you have to bake it twice- once roasted the squash and a second baking the entire casserole} but it came out awesome. If I make this again, I'll probably pre-roast the squash on my prep day so it's ready to go and doesn't take so long to make the night of. I also made my own italian sausage by mixing in <a href="http://balancedbites.com/2012/08/easy-recipe-italian-sausage-spice-blend-from-practical-paleo.html" target="_blank">this seasoning blend</a> with ground turkey {my grocery store didn't have any ground pork this week (sad)} and added in mushrooms and some red bell pepper for more veggies.<br />
<br />
In order to dissuade myself from snacking on a ton of fruit after dinner, I immediately brushed my teeth. It's actually kinda working. More because I'm so lazy and if I ate something, I'd have to brush again and who wants to do that? I shall now spend the rest of my night sipping on water {and staying out of my pantry} and watching Juan Pablo on the Bachelor.<br />

<b>What You Need:</b><br />

<li>1 lbs Boneless, Skinless Chicken Breast</li>
<li>Salt</li>
<li>Pepper</li>
<li>Dried Oregano</li>
<li>A couple cloves Garlic, minced</li>
<li>A couple tsp Lemon Juice</li>
</ul>

<b>What To Do:</b><br />

<li>Preheat over to 350F</li>
<li>Season both side of the chicken breast with salt, pepper, and oregano. Lightly rub on minced garlic.</li>
<li>Place in glass baking dish and lightly drizzle with lemon juice. You don't need a ton, just a bit to give it some brightness</li>
<li>Cover dish with foil and bake for 30-35 minutes, until juices run clear.</li>
<li>Allow to cool in the fridge for about 30-45 minutes then slice thin {It's important to really cool it before slicing. This will help get really thin slices. You could also toss it into the freezer for not as long to firm it up}</li>
<li>Store in fridge and snack at your leisure. Also really good on salad and in lettuce wraps!</li>

Chopped and roasted the brussels sprouts for lunch. Got the breakfast sausage seasoned and browned. Roasted some raw almonds and cashews for snacks throughout the week. Baked off the sweet potato hash. And last but not least, I have the beef for <a href="http://seesarahbake.blogspot.com/2014/01/week-1-menu.html" target="_blank">BBQ Beef "Nachos"</a> in the crock pot for dinner tonight. Not a bad morning.<br />

Now I'm relaxing, watching some football while noshing on some spaghetti squash "pasta" with meat sauce. Oh, and some lovely <a href="http://synergydrinks.com/index.php" target="_blank">guava kombucha</a>. {I think I'm in love with this stuff....}<br />

**Update** Oddly enough, I didn't take a nap at all on Day 1. Though I was marathoning Downton Abbey and who has time to take a nap when the lives of the Crawleys are so riveting? I also discovered I have a wicked post-dinner sweet tooth. After having a plate full of BBQ beef and sweet potatoes, I still found myself going to the kitchen for a banana and some dates. I'm definitely going to have to curb that. Even when I'm not following the Whole30 guidelines to a T, I still use a very similar prep method because it really makes my life easier.<br />
<br />
For breakfast, I'll make a lot of one dish on Sunday and eat it all week. I need something I can throw in my bag, take to work, and eat it at my desk. In my pre-paleo days, this was something like a couple muffins or a pack of instant oatmeal. Now it's much more focused on eggs and protein.<br />

I take the same approach for lunch as I do breakfast: I make enough of one dish to last me all week. This might be a big thing of chili, enough chicken or steak for a week of salads, or maybe a bunch of burgers.<br />
<br />
For dinners, each week I pick out 3 recipes to make. Usually the recipes are big enough for me to get 2-3 meals out of each, so I'll eat leftovers on the other nights.<br />
<br />
I also make sure I have plenty of challenge-approved snacks on hand in case I get hungry. My favorites are almonds, cashews, raisins, dates, jerky, olives, and pickles.<br />

<b>Weekly Prep</b>: My shopping day is normally Saturday or Sunday and I prep on Sunday afternoons. This week, here's my to-do list:<br />
<br />
<ul>
<li>dice and roast sweet potatoes</li>
<li>season and brown ground pork for breakfast sausage</li>
<li>roast brussels sprouts</li>
</ul>

Normally the to-do list a little larger, but since I'll make the eggs every morning and the italian sausage for lunch is fully cooked and just needs to be reheated, it significantly cuts down on prep work.<br />
<br />
Every morning, I can grab a plastic container and fill it with that day's portion of sausage and sweet potato. Then I'll throw 2 eggs {raw, in-shell} in a separate container {they'll be scrambled and cooked in the microwave when I get to work. Not world-class cuisine, but it's tasty and gets the job done.}<br />
<br />
I'm lucky to be able to come home everyday for lunch, so that's one less thing I have to pack for work. This week, I'll just quickly warm up the sausage on the George Foreman and saute the already roasted sprouts to warm them up (microwave would work just fine too).<br />
<br />
When I get home after I put in some time at the gym, I'll eat a banana and work on dinner. This one I'm posting takes a little bit of work, but the crockpot does most of it. {Note: some might consider this meal as "<a href="http://whole30.com/2011/10/sex-with-your-pants-on/" target="_blank">SWYPO</a>" because I'm calling it nachos. If it was attempting to hit the same flavor notes as traditional nachos, I'd agree. But really I just eat it this way because I like eating things with my hands (sandwiches, tacos, etc...)}<br />

<span style="font-size: large;">BBQ Beef Nachos</span><br />
<br />
Inspired by <a href="http://www.theclothesmakethegirl.com/about-well-fed-2/" target="_blank">Well Fed 2</a>'s BBQ Beef Waffle Sandwich<br />
<br />
<b>What You'll Need:</b><br />
<br />
<ul>
<li>Your favorite BBQ beef & sauce recipe {there are several out there- I like the one from Well Fed 2 but since Melissa has chosen not to post it online, I won't do that here. If you're at a loss, try <a href="http://ditchthewheat.com/make-it-paleo-pulled-pork-barbecue/" target="_blank">this one</a> but with beef instead (or you could use pork too)}</li>
<li>2 large sweet potatoes</li>
<li>1 bag Classic Cole Slaw mix {or chop your own mix of cabbage, red onion, and carrots}</li>
<li>1 large Egg {room temperature}</li>
<li>1 cup Light Olive Oil</li>
<li>Juice of 1/2 Lemon</li>
<li>Dill Pickle Slices</li>
</ul>

<b>What To Do:</b></div>

<ol>
<li>Trim & season your beef roast and cook in crockpot per your recipe's directions. Shred meat with about 1 hour left, add sauce to crockpot, and cook for 1 more hour on low.</li>
<li>During the last hour in the crockpot, preheat your oven to 400F. Prep a baking sheet with foil. Slice sweet potatoes into thin (1/8-1/4 inch) rounds, like thick chips. Drizzle with a little oil (coconut, olive, etc) and season with salt. Bake for 20-30 minutes, flipping halfway through. The rounds will be kind of crisp on the outside, but fluffy like a baked potato on the inside. Don't bake until fully crisp like a chip.</li>
<li>With your rounds in the oven, you can make the mayo for the cole slaw. Crack the egg into a wide mouth mason jar. Add lemon juice, a pinch of salt, and olive oil. With an immersion blender at the bottom of the jar, blitz the egg/oil combo. You'll see it change in about 30 seconds. Then slowly bring the blender up to the top of the jar, but keep it in the mixture, to blend all the oil. Presto-chango: you have mayo. {Alternatively, if you don't have an immersion blender, this can be done in a food processors, but you have to VERY SLOWLY drizzle in the olive oil}</li>
<li>Mix your mayo {some or all depending on your preference} with the cabbage mix and a little bit of salt and there ya have it- Whole30 cole slaw.</li>
<li>To serve, I like make a "mountain" of meat, cole slaw and pickle chips which I then pick up and eat 'nacho-style' with the sweet potato rounds. </li>

Not much ever came of it, but it was a fun hobby and a great excuse to bake delicious desserts. Well, I'm taking quite a detour from that. When I last posted (almost 8 months ago!), I was just starting this crazy thing called "Crossfit". Well, you can basically blame Crossfit for why I never post anymore (and it's a good thing- I absolutely love it and it's a much healthier hobby than baking cookies).<br />

Well, my Crossfit gym is doing a 60 day challenge. There's 3 facets to the challenge: nutrition, sleep, and physical activity. The nutrition is the largest factor. We'll be following the plan set out by the amazing minds behind <a href="http://www.whole9life.com/" target="_blank">Whole9life.com </a>and the book <a href="http://www.amazon.com/It-Starts-Food-Discover-Unexpected/dp/1936608898" target="_blank">It Starts with Food</a>. For 60 days, I'll stick to a strict, Whole30 compliant diet. In addition to eating good food, I'm aiming for 8 hours of sleep every night and getting to the gym 5 days a week plus including one mobility/yoga class a week. <br />

I'm super excited for this weekend. Tonight, my beloved Cubbies are in town tonight to play the Nationals! I can't wait to endulge in a hotdog and some beer {and potentially be heckled by Nats fans for wearing Chicago gear on their home turf}. Saturday morning, I finish up my CrossFit fundamentals class {after tomorrow, I can start attending regular classes} and then later that night, some friends of mine are hosting a BBQ. Sunday will be filled with sleeping in, laundry, and an un-godly amount of Netflix marathoning {no judging- you know you're guilty of it too ;-)}<br />

I'm nothing close to a make-up expert. I know enough to get my face from "Oh dear God what is that thing" in the morning to decently presentable for work/public outing and that's about it- BB cream, concealer, and blush and I call it a day. </div>

I can not profess my love for that balm enough}</div>

But that doesn't stop me from trying to find something {anything} that will work and all my dedication has paid off. And while I love a company that prides themselves on using only whole, quality ingredients, I have a hard time forking over $20/box. However, the best part about loving something made with whole, quality ingredients? Easily reproducible, and for much cheaper.<br />

And even better? There are infinite flavor possibilities. All you need for the base are dates and nuts {I've found cashews and walnuts work best}. Then you can throw in whatever you'd like. Dried fruit {cherries, bananas, apples, blueberries}, other nuts {toasted pecans, almonds, or hazelnuts}, spices {cinnamon, cocoa powder}, and anything else you can think of {paleo-friendly <a href="http://www.enjoylifefoods.com/chocolate-for-baking/" target="_blank">chocolate chips</a> anyone?}<br />

<li>1 cup Raw Cashews or Walnuts (I used a mix of both)</li>
<li>1/2 tsp Salt</li>
<li>1 1/2 cups Pitted Dates</li>
<li>3 Tbsp Cocoa Powder</li>
<li>1/2 tsp Vanilla</li>
<li>Water</li>
</ul>

<li>Pulse cashews and/or walnuts and salt in food processor until finely ground. Add dates, cocoa powder, and vanilla and process until mixture is crumbly.</li>
<li>Add water, 1/2 Tbsp at a time, and process until mixture comes together into a ball (I added 1 1/2 Tbsp).</li>
<li>Roll mixture into bite-sized balls or press into a square and cut into bars. Wrap in plastic wrap and store in fridge.</li>

I think I've officially lost my mind. I may be a full-time working adult in a world where Spring Break doesn't exist, but I'm not gonna let that stop me. A couple weeks ago, the James and I packed up and headed south for some much needed warmer weather.<br />
<br />
While Clearwater Beach might not be everyone's first choice for a spring break getaway {it's no Panama City or Cancun}, we had a great time and found plenty to do. The reason why we picked Clearwater was for the Sun 'n Fun Airshow which was taking place about an hour away {I know we're a bunch of nerds- but that's what happens when one- not me- is a pilot and we both work on airplanes for a living}. <br />
<br />
The rest of the time was spent reading on the beach {I re-read The Great Gatsby in anticipation of the movie coming out soon}, eating A LOT, getting <i>really</i> sunburnt {when they say reapply SPF every 2 hours, reapply SPF every two hours}, catching up with some old friends {J went to college down in Florida and has several buddies that still live down there}, and even enjoying an old favorite on the big screen {rainy day}. Hope you don't mind that I share some pictures, all expertly taken with my phone, of course.<br />

This meal is everything I love. Grilled steak. Roasted veggies. Meat on a stick. And bacon. I know everyone makes a huge fuss about bacon and all it's wonders and most of the time I find it overrated.<br />

Except when it comes to brussels sprouts. {p.s. did you know it is actually brussel<b>s</b> sprouts? I had no idea there was an 's' on the end of brussels} Anyways, for years I refused to eat brussels sprouts. My mom attempted to make them once when I was a kid and the smell coming from the stove was so terrible, none of us even attempted to eat them.<br />

After that, I wouldn't go near them. So imagine my shock when one night, my boyfriend (aka The James) served dinner with a side of brussels sprouts and I ate those little baby cabbages up like they were crack.<br />

The secret ingredient? Bacon. Brussels sprouts are one thing bacon <i>definitely</i> makes better. No overrated-ness here.<br />

<b>Steak Skewers with Roasted Brussels Spouts and Sweet Potatoes</b><br />

<i>Ingredients</i><br />

For the steak<br />
<br />
<ul>
<li>1.5lbs Flank Steak, sliced in long strips</li>
<li>2 Tbsp Olive Oil</li>
<li>2 Tbsp Balsamic Vinegar</li>
<li>2 Tbsp Coconut Aminos {soy sauce for non-paleo peeps}</li>
<li>1 tsp Dijon Mustard</li>
<li>1 tsp Garlic, minced</li>
<li>Salt and Pepper</li>
</ul>

For the veggies<br />
<br />
<ul>
<li>1 pkg Brussels Sprouts, halved</li>
<li>2 Medium Sweet Potatoes, diced</li>
<li>4 slices Bacon</li>
<li>Olive Oil</li>
<li>Salt and Pepper</li>
</ul>

Directions</i><br />
<br />
<ol>
<li>Place steak in a ziploc bag. Whisk together all marinade ingredients in a small bowl, pour over steak. Seal and allow to marinate for at least 1 hour and up to over night in the fridge.</li>
<li>30 minutes before you're ready to grill, soak skewers in water to prevent burning.</li>
<li>Preheat oven to 425F and start up your grill. </li>
<li>Fry up bacon until crispy. Crumble when cooled. Make sure you save the leftover grease.</li>
<li>Combine brussels sprouts and sweet potatoes in a bowl. Drizzle bacon grease and additional olive oil if necessary. Season with salt and pepper and toss together.</li>
<li>Spread out in a single layer on a baking sheet and roast for 30 minutes. When done, mix in crumbled bacon</li>
<li>Meanwhile, 'thread' steak strips on a skewer, pound thin, and grill for 1-2 minutes on each side. Allow to rest for a few minutes before devouring</li>
