Fiesta Egg Scramble


Am I the only one that has the hardest time spelling 'omelette'? Are there 2 M's? 2 L's? I usually getting the double T's right. Oh- crap. That extra E.... No? Just me? That's cool too. It's why Google was invented.
Anyways, this isn't about my inability to spell breakfast foods. It's about making breakfast food. But since my ability to make omelettes is as skilled as my ability to spell them, we're going to forget about that nonsense of flipping and making eggs look pretty and just scramble everything together. 
This is just really simple, Mexican flavored inspired scrambled eggs, but that doesn't sound very exciting. Hence, fiesta! It's a Mexican breakfast party {or something like that ;-)}
 
Fiesta Egg Scramble

What You'll Need:
Makes 1 omelette


  • 1 tsp Ghee
  • 2 Eggs
  • 1-2oz Chorizo**, already browned and cooked through from prep day
  • 1/4 cup Onions and Peppers, already diced and sauteed to tender-crisp from your prep day
  • Salt & Pepper
  • 1/4 cup Salsa


What To Do:


  1. Crack eggs in a bowl and beat well with a fork. Season with salt and pepper. Mix in your chorizo & veggies with the beaten eggs.
  2. Heat up skillet on med-low heat. When it gets hot, add ghee (or fat of choice). When ghee has melted, add your eggs/meat/veggies and move the pan around to spread them out evenly.
  3. When the eggs start to firm up, but there's still a little raw egg on top, break up eggs to 'scramble'
  4. When eggs are fully cooked, slide off onto plate and top with salsa.


** To make your own chorizo, add 1 Tbsp each of: chipotle chili powder, paprika, garlic powder, & onion powder and 1/2 Tbsp of salt to 1 lb of ground pork.**


Toasted Walnut Banana Muffins


For the first couple months that I started eating paleo, I stayed away from 'paleofied' baked goods.  For no particular reason other than there is no such thing as almond or coconut flour in my small town {which really isn't that small. They just refuse to get normal business and services, but that's a whole different rant....}

But then I realized that Amazon sells all sorts of 'gourmet' food items.  Every coconut product you can image {oil, flour, flakes, etc....}. Bulk almonds which can be processed into flour. And best of all, even though completely unrelated- Larabars by the box {These are my go-to if I know I'm going to be somewhere without paleo-friendly food options}.
So I started researching and experimenting and I realized that I LOVE baking with coconut flour.  This stuff is magic.  It's like super strong. Soaks up liquid like no ones business. And you'd never know you weren't eating a regular, flour- and gluten-ladened treat.

Breakfast has been the trickiest meal for me because I'm a 'roll out of bed and go' type of person.  No time to fry up some bacon and eggs. I just want to grab-and-go.  {I know- most would say 'why don't you just wake up earlier?' Because that would require waking up earlier and my bed and I have a very special relationship}.  So muffins to the rescue.  I usually grab a couple of these along with a couple hard-boiled eggs and I have a breakfast that can rush out the door with me.

Raspberry & White Chocolate Scones

Here's a little insight into my world.  I spend all day here:
Surrounded by fake flower pens, a Lego Sears Tower to remind me of the greatest city in the world, an uber-geeky Stormtropper bobblehead, and a field of Post-It notes.  Along with my all-important breakfast stash of Special K protein bars and oatmeal that taste like cookies. Not shown- my old lady multivitamins. It's just real life.
 
But no matter how wonderful Mr. Quaker is (which I originally typed as 'quacker'. No, the oatmeal man is not a duck...), sometimes a girl just needs a change. 
Enter the awesome world of scones.  Light crumbly sweet biscuits shoved full of raspberries and spotted with white chocolate chips.  Perfect with a tall cool glass of milk or a creamy vanilla latte.  This week, I breakfast like one classy broad.

Breakfast Week Finale: Monkey Bread

I'm a culinary cheat.  I use boxed cake mixes.  I buy those jars of minced garlic.  I've never cook with dried beans- canned is totes the way to go.

And I make deceivingly easy breakfast casseroles with refrigerated biscuits.  Generic brand no less.
Its all the awesomeness of a cinnamon roll without actually having to make dough, wait for it to rise, roll, cut, bake, etc..... Toss biscuit pieces in cinnamon-sugar.  Douse with melted butter and more sugar.  Bake. Devour.
Yep- cheating is delicious.

Breakfast Week Part Deux: Homemade Bagels

There are days that I rock.  Days that I wake up early on a Saturday, take the pup on a run, come back and make myself a good healthy salad for lunch and spend the day reading something that probably should be on Oprah's Book List.

Then there are days that I don't exactly do that.......Days where I wake up at noon, make bagels, and then spend the remainder of the day drowning said bagels in cream cheese and watch She's All That and Never Been Kissed.  
Both of these days are winners. Being active and healthy: Awesome.  Carbs and Freddie Prince Jr?  Equally awesome
I can neither confirm nor deny what kind of day Saturday was....

Breakfast Week Kickoff: Apple-Cranberry Pecan Muffins

Your 10th grade Health teacher told you over and over.  Your mom yelled it at you as you ran out the door late for school.  Your stomach not-so-kindly reminds you at about 9:00 in the morning....

"Don't forget breakfast! It's the most important meal of the day!"
Yeah yeah yeah......I admit- I spent the first 23 years of my life completing ignoring that advice.  I'm a pro at timing my mornings so precisely that I now exactly what time I have to wake up in order to squeeze in a shower, blow dry my hair, throw on some mascara, and run out the door to get to work on time.
However, being starving, staring a a computer screen with 3 hours til lunch to go is no bueno.  Plus your co-workers begin looking at you funny when they can hear your stomach rumble all morning over the cubicle walls (Sorry guys.....)

So now a box of instant oatmeal permanently resides in my file cabinet and every morning I have a hot, yummy, filing breakfast that holds me over until lunch.  I have seen the light! And I'm hoping you will too :)
I know- most people would consider oatmeal every morning deathly boring.  So this week, we're going to branch out.   I got muffins and bagels and cinnamon-sugar goodness coming your way.  Let's do this.  First up: Hearty, fruity, nutty muffins- the perfect grab-and-go breakfast.

Pumpkin Waffles

What are some of the best words you could ever hear? In my book, "And in the morning, I'm makin' waffles" is at the top of my list.  Oh, I made waffles alright.  But these aren't just any waffles.
For one, I'll give you a little warning. These waffles take a little bit of TLC.  Don't plan on whipping these up on a morning where you're running late for work.  However, when you do find the time, they are TOTALLY worth it.  Light and fluffy inside. Brown and crispy outside. Plus the added awesomeness of pumpkin? Yeah, totes worth it. 
These waffles would be great for the morning after Thanksgiving.  Whip them up, keep them warm in the oven, and you'll have some happy house guests.  I dusted mine with a little bit of powdered sugar, but a traditional syrup would work great too.

Baked Cinnamon Sugar Doughnuts

I'm a girl that knows her doughnuts.  Trust me.  I've literally have been making them since birth.

No seriously.  Every year for Christmas, my family always made doughnuts and left those out for Santa instead of the traditional sugar cookies.  (Yes, I'm fully aware that it's not even Thanksgiving yet- no worries, this isn't a Christmas post).  The point is that I'm well versed in how labor-intensive making doughnuts can be.  I'm fully aware in how finicky the dough can be.  How much hassle it is to roll it out.  Then you have to deal with the deep fryer.  Making doughnuts is no easy task.
So what if I told you that they could be?  And, what if I told you that they didn't have to be fried? And what if I told you that you get to cover them in butter and cinnamon sugar? You game?
Awesome- because so are these doughnuts.  Dough that won't attack your hands.  You don't have to worry about ruining clothes because they got splattered in oil.  And they make all your co-workers your best friends. Cubical monkeys LOVE their doughnuts.
