Dear pot pies of the world-
I'm sorry I never gave you a fighting chance. I'm sorry I never had fond memories of you as a child. For all I knew, you used to live in the freezer. I would pop you in the microwave and you would come out bland and soggy and hot as lava. Good bye taste buds.
I'm sorry I resisted you for so long. I never knew how delicious you could be. That you could have depth and flavor but still be crazy easy to make.
And if you see him, could you please tell your friend frozen puff pastry that I think I love him? He kinda rocks.
Love,
Sarah
Note for the pot pie aficionado out there, be kind to this dish. It's not a true pot pie like you know and love. It's more of a super thick, creamy soup topped with an awesome puff pastry topper. Just go with it- it's delicious, no matter what you call it.

Roasted Veggie Mexican Lasagna
OK- so sorry for wrecking all your hopes and dreams and New Years resolutions with that last post. That was very irresponsible of me. My bad.....
So I'm here to make amends. These amends include a plethora of roasted veggies, salsa, and fresh spinach.
Roasted to ridiculous deliciousness.
Layered with tortillas and cheese (reduced-fat, I promise). And topped with sour cream (again- I went with light. See, everything's resolution friendly. I SWEAR)

Its Taco Tuesday!!!
Tuesday are one of my "off" days in which I throw away all the recipes and whip up tacos. I love it because its easy, tasty, AND healthy. Usually I just make the tacos, but this week I added a side dish: Rachael Ray's Warm Black Bean and Corn Salad.
How Long Is This Gonna Take:About 10 minutes! How awesome is that?!
What You'll Need:
2 Tbsp. EVOO
1 medium red onion, chopped
2 large garlic cloves, chopped
1/2 - 1 teaspoon crushed red pepper flakes (depending on how spicy you want it)
1 tsp. ground cumin
1 red bell pepper, chopped
1 20 oz. box frozen corn kernals, defrosted
1/2 cup of chicken stock / broth
1 15 oz. can of black beans, rinsed and drained
2 large garlic cloves, chopped
1/2 - 1 teaspoon crushed red pepper flakes (depending on how spicy you want it)
1 tsp. ground cumin
1 red bell pepper, chopped
1 20 oz. box frozen corn kernals, defrosted
1/2 cup of chicken stock / broth
1 15 oz. can of black beans, rinsed and drained
1 lime, juiced (approx 2 tbsp juice)
2-3 Tbsp. fresh cilantro, chopped (I used dried)
2-3 Tbsp. fresh cilantro, chopped (I used dried)
1. Preheat a medium skillet over medium heat with 2 tbsp. of the EVOO. Add the onions, garlic, red pepper flakes, cumin, S&P. Cook, stirring ocassionally, for about 3 minutes.
