I'm Back and With Spinach Lasanga Rollups

No...I'm not dead.


No...I haven't broken both hands rendering me unable to cook or type.


I've just been lazy. In all realities, I've been keeping myself fed with lots of new, tasty recipes. I just haven't been getting my camera out. But I swear I'll be better (for at least this week.... :-P)


Anyways, I've been LOVING Gina's recipes over at SkinnyTaste.com. Her low-fat, Weight Watchers friendly recipes are SOOOO GOOOOOD and you don't miss the butter, cream, oil, etc at all


This week, I gave her Spinach Lasagna Rollups a try.

How Long Is It Gonna Take:
about 45 mins to an hour. A good weekend-cooking dish


What You'll Need:



What To Do:1. Pre-heat oven to 350F. Boil lasagna noodles as directed on package. Drain and immediately (so they don't stick together) lay noodles down on wax paper to dry and cool. Combine spinach, ricotta, parmesan, egg, and S&P in a medium bowl.



2. Put about 1 cup of the crushed tomatoes into the bottom of your casserole dish. Spread 1/3 cup of the cheese-spinach mix onto each noodle, roll up and put seam side down in dish. Repeat with remaining noodles.






3. Cover with remaining tomatoes and top each rollup with ~1 tbsp mozzarella. Cover with aluminum foil and bake for 35-40 minutes.

  1. The general consensus in our household is that cheese + carbs + anything = :D, but spinach is always a welcome component.
