Betty Crocker to the rescue again! Not really sure what she's rescuing, but I wasn't really feeling a Christmas-y dessert (even though I'm listening to the Glee Christmas Album as I type...how I love their rendition of Baby, Its Cold Outside). So I was scrolling long my weekly BC email and I noticed a link to these little devils. Though they're titled "Heavenly" on the site, these Chocolate Mousse Bars from Betty Crocker.com are definitely more on the sinful side. Basically, its frosting on top of cheesecake on top of a cookie....
How Long Is This Gonna Take:
This one is a bit work intensive, but nothing is difficult about it. Actual work time: about 30 minutes, total time (including 1 hour wait time): 75 minutes.
What You'll Need:
1 pouch BC sugar cookie mix
1 egg
1 stick butter, softened
1 bag semisweet chocolate chips
1- 8oz package cream cheese, softened
1.5 cups heavy whipping cream
What To Do:
1. Preheat oven to 350F. Beat together cookie dough mix, egg, and butter. Spread in bottom of ungreased (I greased mine) 13x9-inch pan. Bake for 12-15 minutes or until light golden brown; cool.
2. Microwave 1 cup chocolate chips uncovered on high 1 to 2 minutes or until melted (check and stir every 20-30 seconds). In medium bowl, beat cream cheese with electric mixer until smooth. Beat melted chocolate into cream cheese. Beat 1 cup whipping cream with electric mixer on high speed until stiff peaks form. Fold whipping cream into chocolate-cream cheese mixture until well blended. Spread over cooled cookie base. Cover; refrigerate 1 hour or until set.
3. Microwave 1 cup chocolate chips uncovered on high 1 to 2 minutes or until melted (again, check and stir every 20-30 seconds). Whisk or stir in 1/2 cup whipping cream until blended. Spoon warm chocolate mixture over mousse; spread evenly. Refrigerate 30 minutes or until set.
